| 2 Tblsp salt |
| 2 Tblsp oregano |
| 2 Tblsp parsley |
| 2 Tblsp garlic |
| 1/4-1/2 cup olive oil |
Mix ingredients to a paste. Rub onto turkey or chicken. Tuck it under the skin and rub it into cavity. Bake in roasting pan at 400 degrees (uncovered).
