Rhubarb Cake

| 1 cup flour | 1/2 cup milk |
| 4 Tblsp sugar | 2 c cut-up rhubarb |
| 1 tsp baking powder | 2/3 cup sugar |
| 1/4 tsp salt | 1 tsp cinnamon |
| 3 Tblsp melted shortening | 1 tsp orange zest |
| 1 beaten egg | 1 Tblsp orange juice |
Line pan with rhubarb pieces; cover with sugar, cinnamon, and orange zest. Mix dry ingredients and combine with shortening, milk, and egg. Pour over rhubarb. Bake at 350 degrees for 25 minutes, then pour over 1 Tblsp orange juice and sprinkle with sugar and bake 10 more miutes.
