Apple Sausage Pancakes

| 1/2 lb. pork sausage | 2 Tblsp oil |
| 1 egg | 1 cup pancake mix |
| 2/3 cup milk | 1/2 tsp cinnamon |
| 1/2 cup apple | |
| Cider Syrup: | |
| 1/2 cup sugar | 1 cup apple cider |
| 1 Tblsp cornstarch | 1 Tblsp lemon juice |
| 1/8 tsp pumpkin pie spice | 2 Tblsp butter/margarine |
Cook sausage over medium heat until no longer pink; drain and set aside. In a bowl, beat egg, milk, and oil. Stir in pancake mix and cinnamon just until moistened. Fold in apple (peeled and shredded) and sausage. Pour batter by 1/4 cupsful onto lightly greased hot griddle. For syrup: combine sugar, cornstarch, and pumpkin pie spice in a saucepan. Gradually stir in cider and lemon juice until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from heat; stir in butter until melted.
