| 1 can black-eyed peas, drained and rinsed |
| 1 can pinto or red beans, drained and rinsed |
| 1 can white corn, drained and rinsed |
| 1 can black beans, drained and rinsed |
| 1 jalepeno pepper, chopped |
| 1 stalk celery, chopped |
| 1 medium red onion, chopped |
| 1 medium green pepper, chopped |
| Boil the following, let cool, then add to the above: |
| 1/2 cup sugar |
| 1/2 cup vinegar |
| 1/2 cup oil |
| 1 tsp each salt and pepper |
This is really good with chips. I'd add more jalepeno and maybe some cilantro and tomato too to make it more salsa-ish.
