Broccoli Cheese Soup

2 cups water | 4 cups diced potatoes |
2 onions | 2 cups carrots |
2 cups celery | 3 cups broccoli |
Combine all above except broccoli and simmer for 5 minutes. Add broccoli and simmer 15 minutes more.
3 Tblsp flour | 1/2 cup butter |
2 cups milk | 2 lbs Velveeta cheese |
2 tsp dry mustard | 1/4 tsp pepper |
Melt butter in large, heavy saucepan; stir in flour until bubbly. Add milk; stir until thick. Add cheese and spices. Add vegetables, undrained. Stir together and heat through. Serves 8-10. This is a good bread bowl soup.
