Wash cylindra or ferono or any long variety of beets thoroughly. Cook until skins can be slipped. Slip skins. Slice in even slices. Freeze in bags. When ready to eat, defrost and warm. Enjoy! Just like nice, fresh garden beets. We like the long varieties of beets best even for pickling because the slices are a more uniform size and the color is uniform.
