Ricks College Spinach Salad
Salad
1/2 gallon salad greens |
2 cups sliced fresh mushrooms |
4 strips bacon, cooked and crumbled |
2 cups grated Swiss cheese |
2 cups mandarin oranges |
Sugared almonds (recipe below) |
Could substitute strawberries for mandarin oranges. Sugared almonds: 1/2 cup sliced almonds, 3 Tblsp sugar; 2 Tblsp butter, melted. Blend sugar and melted butter well. Coat almonds and spread on baking sheet. Bake at 325 degrees for 10 to 15 minutes. When lightly browned, remove from oven; loosen nuts with a metal spatula, and let cool completely. Place salad greens in serving bowl and layer mushrooms, bacon, cheese, mandarin oranges, and nuts. Serve with poppy seed dressing. Poppy Seed Dressing: 1/2 cup white vinegar, 1/2 cup sugar, 2 tsp poppy seeds, 1 Tblsp grated onion, 1/2 tsp salt, 1 Tblsp prepared mustard, 1 cup vegetable oil. Mix all but oil until well blended and sugar is dissolved. Gradually add oil, pulverizing it into dressing.
