1 small pkg lime Jello 1 can crushed pineapple, drained
1 cup water 1 cup cottage cheese
1 cup pineapple juice 1 cup chopped nuts
15 large marshmallows 1/2 pint whipped cream


Dissolve Jello in 1 cup boiling water. Add pineapple juice and marshmallows. Heat all this until marshmallows melt. Let cool until it starts to set; then beat. Add small can pineapple, cottage cheese, and chopped nuts. Fold in whipped cream. Cover and let set. When Matt asked one of his patients at holiday time what some of their favorite family dishes were, this was one. The Mortensens added this recipe to their holiday menu.
