1/3 cup craisins | 1/4 c mayonnaise |
1 lb carrots, grated | 3 Tblsp sugar |
2 Tblsp lemon juice | 1/2 tsp salt |
1/4 c sour cream | 1/3 c crushed pineapple |
Pour boiling water over craisins; after 5 minutes drain. Place grated carrots in bowl; add lemon juice and toss. Whisk together sour cream, mayonnaise, sugar, and salt to make dressing. Pour dressing over carrots and mix; add drained pineapple and craisins.
