Salad

Chicken breasts or tenders, chunked
1 pkg fajita seasoning mix


Cook chicken; season with fajita seasoning when cooked.


Dressing:
1 jalapeno pepper 1 clove garlic
2 medium tomatillos Juice from 2 limes
1/2 bunch cilantro 1 pkg Ranch dressing mix


Could use 1/2 bottle of prepared Hidden Valley buttermilk dressing in place of dressing mix. Place all dressing ingredients in blender and blend together. Assemble salad in order listed below; top with dressing and serve.

Flour tortilla
Cooked long grain white rice
Black beans, drained and rinsed
Chicken, prepared as stated above
Lettuce
Shredded cheddar cheese
Diced avocado
Salsa or chopped tomatoes
