Caesar Salad

Croutons: | |
1/2 loaf Italian bread | 1/4 cup Parmesan, grated |
1/2 cube butter | 1 garlic clove, minced |
1/2 tsp Salt and pepper | 1/4 tsp oregano |
Remove crusts from bread, then cut into cubes. Mix butter, garlic, oregano, and salt and pepper. Heat to melt butter. Pour over bread cubes and toss. Spread cubes in single layer in cookie sheet. Sprinkle with grated Parmesan cheese. Bake for about 20 minutes minutes at 400 degrees or until golden brown. degrees.
Dressing: | |
1 clove garlic, minced | 1 Tblsp red wine vinegar |
2 tsp Dijon mustard | 1 tsp Worcestershire sauce |
1/2 tsp salt | 2 Tblsp oil | 2 oz. Parmesan cheese | 1 cup tofu |
Put dressing ingredients except oil in blender and blend until mixed; add oil slowly. Cut 2 heads Romaine lettuce in 2-inch pieces. Toss with dressing. Squeeze 1/2 fresh lemon over lettuce; sprinkle with pepper, shredded Parmesan cheese, and 1/2 cup croutons. Serve immediately. If desired, place 2 grilled chicken breasts, sliced in strips, on top.
