BBQ sauce | |
Assorted lettuce mix | |
Jicama, julienned or chunked | |
1 can corn | |
Tomatoes, cut (Romas work well) | |
Ranch dressing | |
Chicken breasts, number varies with number being served | |
Cilantro, couple of handfuls of leaves in salad mix | |
1 can black beans, drained | |
Monterey Jack cheese, shredded | |
Tortilla chips | |
Fresh limes, quartered |
Cook chicken in crockpot with BBQ sauce or grill it with BBQ sauce. While that is cooking or as you are getting near the time to serve, combine lettuce, cilantro, black beans, and corn in large serving bowl. Make this salad "assembly line" style. First lettuce mixture, then chicken, cheese, tomatoes, Ranch dressing, additional BBQ sauce, crumbled up tortilla chips, and lime squeezed over the top. This is similar to California Pizza Kitchen's Chopped BBQ Chicken Salad.
