1 medium onion, chopped | 1/4 tsp pepper |
1 clove garlic, minced | 2 Tblsp fresh basil |
3 medium tomatoes, chopped | 1 Tblsp fresh oregano |
3 medium zucchini, chopped | 1 tsp thyme |
1 carrot, shredded | 2 Tblsp olive oil |
1 tsp salt | 12 oz. pasta |
1 cup Parmesan cheese, grated |
Combine vegetables in large bowl. Add salt, pepper, basil, oregano, and thyme. Toss lightly. Heat olive oil in skillet. Add vegetable mixture and saute over medium heat. Reduce heat and simmer for 15 minutes. Serve on hot pasta with Parmesan cheese.
