Crockpot Salsa Chicken

2 lb. boneless skinless ch breasts | 1/2 cup finely diced celery |
2 Tblsp Taco Seasoning | 1/2 cup shredded carrots |
1 small can petite diced tomatoes | 1 cup salsa |
1 cup onion, finely diced | 3 Tblsp sour cream |
Chunk chicken and place in crockpot. Sprinkle Taco Seasoning over meat then layer vegetable and salsa on top. Pour 1/2 cup water over the mixture, set on low, and cook for about 4 hours. When ready to serve, shred the chicken with two forks, then stir in the sour cream. Serve over brown rice.
