Cashew Chicken

2 whole chicken breasts | 1 Tblsp corn starch |
1 tsp salt | 2 Tblsp soy sauce |
1 tsp corn starch | 1 cup chicken broth |
1 tsp soy sauce | 1 cup roasted cashews |
1 small onion, chopped | 1 green onion, minced |
1 1/4 green vegetables | 2 Tblsp oil |
Skin, bone, cube chicken. Could use water instead of broth. For vegetables use cut up pea pods, broccoli, green beans, or asparagus. Dissolve 1 Tblsp cornstarch in 2 Tblsp soy sauce;add broth. Marinate chicken in salt, 1 tsp cornstarch, 1 tsp soy sauce, and 1 small onion. Let stand 20 minutes. Heat 1 tsp oil until hot. Stir fry chicken 2-3 minutes or until white. Move it to outer edge of pan. Add remaining oil. Stir fry onion 1 minute. Add green vegetables; stir fry until tender crisp. Mix chicken with vegetables. Stir in cornstarch mixture; cook until thickened. Stir in cashews. Garnish with green onion.
