3 medium zucchini, peeled and cubed | 1 pkg cornbread dressing mix |
1 medium onion, minced | 1 grated carrot |
1 bell pepper, diced | 2 beaten eggs |
2 Tblsp oil | 1/2 cup water |
1 cup grated cheese | 1 cup sour cream |
Boil zucchini until tender; drain and mash. Saute onion and pepper in oil until tender. Mix with mashed zucchini and add dressing mix, eggs, water, carrot, and sour cream. Pour into greased casserole dish and bake at 350 degrees for 30 minutes. Top with grated cheese and bake for 5 more minutes.
