Zucchini Casserole

1 pound ground beef | 1 tsp salt |
1 small onion, minced | 1/2 tsp pepper |
1/2 cup minute rice | 1/2 tsp Italian seasoning |
1/2 cup milk | 8 small or 1 large zucchini |
2 8-oz. cans tomato sauce |
Brown meat (could use beef and lamb mixed); mix with onion, rice, and seasonings. (could use thyme instead of Italian seasoning.) Wash and scrub squash. Cut into bite-sized chunks. Heat tomato sauce. Stir squash and meat mixture into sauce. Mix well and bring to a boil. Place in 9 x 13-inch pan. Bake, covered, for 1 hour at 350 degrees or until tender. Uncover during the last 10 minutes. Stir occasionally. Grated Parmesan cheese may be added.
