Sweet and Sour Pork

6 boneless pork chops | 1/2 cup vinegar |
2 Tblsp oil | 2 cups pineapple juice |
1/3 cup water | 2 Tblsp soy sauce |
1/3 cup brown sugar | 3/4 cup green pepper |
2 Tblsp cornstarch | 1/4 cup sliced onion |
1/2 tsp salt | #2 can pineapple chunks |
Cube pork chops; brown slightly in oil. Add water and cook covered for 1 hour. Combine next 6 ingredients (use juice from pineapple chunks adding additional juice to make 2 cups); cook until thickened. Pour over cooked pork. Add diced green pepper, sliced onion, and pineapple chunks; cook 5 more minutes. Serve over cooked rice. Optional: cashews, bamboo shoots, water chestnuts, carrots, yams. (I add the optionals, especially cashews.)
