Alice Springs Chicken

1/2 c Dijon mustard | 1 Tblsp vegetable oil |
1/2 cup honey | 8 oz. mushrooms, sliced |
1 1/2 tsp vegetable oil | 2 Tblsp butter |
1/2 tsp lemon juice | Salt,pepper,paprika |
8 chicken breasts | 8 slices bacon |
1 c Jack cheese | 1 c cheddar cheese |
1 tsp parsley, chopped |
Use boneless skinless chicken breasts. Shred cheeses. Cook bacon. Mix mustard, honey, 1 1/2 tsp oil, and lemon juice. Whisk mixture for about 30 seconds. Pour 2/3 of sauce over chicken and marinate in refrigerator for at least 2 hours. Chill remaining marinade. After chicken has marinated, preheat oven to 375 degrees. Heat large skillet. Remove chicken from marinade and sear in pan for 3-4 minutes on each side in 1 Tblsp oil (discard marinade). Place chicken in oven dish; sprinkle with spices and brush with some of the sauce. Place chicken in oven while sauteing mushrooms in butter. Layer in pan as follows: chicken, bacon, mushrooms, Jack cheese, and cheddar cheese. Place in oven and bake for 7-10 minutes. Cheese will be melted and start to bubble. Sprinkle each chicken breast with 1/2 tsp parsley before serving and serve with reserved honey/mustard sauce. I have no idea who Alice Spring is, but her chicken is really good.
