Crust: | |
1/4 cup brown sugar | 1 1/2 cubes butter, cubed |
2 cups flour | |
1/2 tsp salt | |
Filling: | |
4 eggs +2egg yolks | 1 tsp lemon zest |
1/3 cup flour | 1 cup fresh lemon juice |
2 cups sugar |
Preheat oven to 350 degrees. Grease 9 x 13-inch pan and line with foil. Grease foil with oil. Mix butter, flour, sugars, and salt until dough comes together. Press into bottom and 1/2-inch up sides of pan. Bake for about 25 minutes. Cool slightly. For filling, whisk eggs, sugar, and flour; add zest and juice. Reduce oven temperature to 300. Pour filling over warm crust and return to oven; bake about 30 minutes until set. Cool in pan on rack, then refrigerate at least 2 hours. Lift out of pan using foil, and slice. Dust with powdered sugar before serving.
