2/3 cup uncooked rice
1 small pkg lemon Jello
1 cup crushed pineapple
1 1/2 c sugar
1 pint whipping cream


Cook rice in salted boiling water until done. (Minute Rice is not successful in this recipe.) Add Jello to drained, hot rice. Stir until dissolved. (Do not add any water to Jello). Add 1 cup crushed pineapple. Stir well. Add 1 1/2 cups sugar. Stir until sugar is dissolved. Let set in refrigerator until firm; it takes several hours. Whip cream and fold into rice mixture. Do not sugar or flavor whipped cream before adding to rice.
