3/8 cube soft butter 1 c boiled raisins
1/2 cup brown sugar 1/4 c chopped nuts
1 c grated carrots 1/2 tsp soda
1 tsp orange juice 1 tsp baking powder
1/2 tsp lemon juice 1/2 tsp salt
1 beaten egg 1/2 tsp cinnamon
1 3/4 c flour


Beat butter, sugar, and egg together. Add carrots, orange and lemon juices. Sift dry ingredients together. Add to first mixture gradually while stirring. Add raisins and nuts last. Mix 1 cup sugar and 1 1/2 cups water. Heat and stir together and put in crockpot. Pour batter over liquid and cook on high for 1 hour. Test with toothpick for doneness. If done, turn off crockpot. SAUCE: Mix 1 cup sugar with 2-3 Tblsp flour, 1 pinch salt, and dash of nutmeg. Add enough canned milk to make a paste. Mix 3 1/2 cups hot water with paste. Add 1 Tblsp butter stirring constantly; cook until thick. Add 1/2 tsp vanilla and 2 drops lemon extract; serve over pudding. DO NOT DOUBLE RECIPE.
