Chuck-A-Rama Carrot Cake

3 1/4 cups shredded carrots | 1 tsp salt |
1 1/2 cups sugar | 1/3 cup chopped nuts |
1 1/2 cups flour | 3/4 cup craisins |
1 tsp soda | 1/3 cup oil |
1 tsp cinnamon | 2 eggs |
1 tsp vanilla |
Peel and shred carrots very fine. Place first seven ingredients in large bowl and mix. Add remaining ingredients and mix until well blended. Place batter in greased 9-inch round cake pan and bake for 65 minutes at 325 degrees, or until done. Let cool and frost with cream cheese frosting: 4-oz. pkg cream cheese; 1/4 cup butter, softened; 3 cups powdered sugar, and 1 tsp vanilla. Mix cream cheese and butter until smooth. Add sugar and vanilla. Beat until light and fluffy.
