3 1/4 cups shredded carrots 1 tsp salt
1 1/2 cups sugar 1/3 cup chopped nuts
1 1/2 cups flour 3/4 cup craisins
1 tsp soda 1/3 cup oil
1 tsp cinnamon 2 eggs
1 tsp vanilla


Peel and shred carrots very fine. Place first seven ingredients in large bowl and mix. Add remaining ingredients and mix until well blended. Place batter in greased 9-inch round cake pan and bake for 65 minutes at 325 degrees, or until done. Let cool and frost with cream cheese frosting: 4-oz. pkg cream cheese; 1/4 cup butter, softened; 3 cups powdered sugar, and 1 tsp vanilla. Mix cream cheese and butter until smooth. Add sugar and vanilla. Beat until light and fluffy.
