1 cup shortening 1 tsp soda
2 cups sugar 1 tsp cinnamon
4 eggs 1 tsp nutmeg
3 cups flour 2 cups applesauce
1 tsp salt 1+ cups nuts


Place half of flour in large bowl. Add fruit and nuts--candied cherries, pineapple, craisins, nuts--and stir to coat. In another bowl, cream shortening and sugar. Add eggs and beat until fluffy. Add applesauce to mixture. Add the rest of the flour with other dry ingredients. Pour batter into bowl containing coated fruit and nuts and stir to mix. Bake in loaf pans at 325 degrees for about 1 1/4 hours. Makes about 3 loaf pans depending on amount of fruit. Cool and freeze.
