2 9-inch devil's food cake layers 1 1/2 tsp vanilla
3 1/2-pints heavy cream 1 cup cherry jelly/jam
1/2 cup sugar 1 quart cherry pie filling


Bake the cake according to directions on the box and cool overnight. Whip the cream in a chilled bowl until it forms soft peaks. Add the sugar and vanilla and mix until stiff peaks form. Split the cake layers into 2 pieces each. Spread the jam over 3 layers, but not the top. Assemble the cake by spreading equal amounts of cream and stacking the layers. Place the top layer on the cake and spread the whipped cream on the top and sides. Pour cherries over the top of the cake. Allow some to run down the sides. Could be made using strawberries and a white cake, strawberry jam instead of cherry and decorate with fresh strawberries instead of cherry pie filling. In place of jam could use pureed cherry pie filling.
