1 1/2 cups oil 2 tsp baking soda
4 eggs 2 cups flaked coconut
2 cups sugar 2 cups shredded carrots
2 tsp cinnamon 1/2 to 1 c chopped nuts
1 tsp salt 8-oz. can crushed pineapple
2 1/4 cups flour


Drain pineapple. Put each ingredient as listed in bowl, mixing well after each entry. Pour batter into greased and floured 9 x 13-inch pan. Bake at 350 degrees for 40 minutes. Cool and frost with cream cheese frosting.

Cream Cheese Frosting:
1/2 cube butter 2 1/2 cups powdered sugar
1 tsp vanilla 1 Tblsp milk
8-oz. pkg cream cheese


Soften cream cheese. Mix with other ingredients and frost cake.
