1 1/2 cups oil | 2 tsp baking soda |
4 eggs | 2 cups flaked coconut |
2 cups sugar | 2 cups shredded carrots |
2 tsp cinnamon | 1/2 to 1 c chopped nuts |
1 tsp salt | 8-oz. can crushed pineapple |
2 1/4 cups flour |
Drain pineapple. Put each ingredient as listed in bowl, mixing well after each entry. Pour batter into greased and floured 9 x 13-inch pan. Bake at 350 degrees for 40 minutes. Cool and frost with cream cheese frosting.
Cream Cheese Frosting: | |
1/2 cube butter | 2 1/2 cups powdered sugar |
1 tsp vanilla | 1 Tblsp milk |
8-oz. pkg cream cheese |
Soften cream cheese. Mix with other ingredients and frost cake.
