Caramel Dumplings

2 Tblsp butter | 2 tsp baking powder |
1 1/2 cups packed brown sugar | 1/2 tsp salt |
1 1/2 cups water | 1/2 cup milk |
1 1/4 cups flour | 1 tsp vanilla |
1/2 cup sugar | Cream or vanilla ice cream |
Make a caramel sauce by combining butter, brown sugar, and water. Bring to a boil then reduce heat to a simmer. While sauce simmers, make dumplings by mixing flour, sugar, baking powder, and salt in a medium bowl; stir in milk and vanilla (batter should be stiff). Drop by teaspoonsful into simmering caramel sauce. Cover pan and simmer for 20 minutes. Do not remove lid until time is up. Spoon dumplings into serving dishes and serve with cream or ice cream, if desired. Makes 6 servings. Grandma Hannah Barney called these Danish Dumplings.
