1 large lemon 1 1/2 cups sugar
4 eggs 1 tsp vanilla
1 cube butter, melted Pie crust, unbaked
Whipped cream


Preheat oven to 350 degrees. Choose lemon that doesn't have too much "white" under the peel. Leaving rind ON, cut lemon into small chunks. Remove seeds. Blend together lemon chunks, eggs, butter, vanilla, and sugar until smooth and creamy. It will be fairly runny. Pour into crust. Bake for about 40 minutes. Serve with whipped cream.
