1 cup flour 1/2 cup milk
4 Tblsp sugar 2 c cut-up rhubarb
1 tsp baking powder 2/3 cup sugar
1/4 tsp salt 1 tsp cinnamon
3 Tblsp melted shortening 1 tsp orange zest
1 beaten egg 1 Tblsp orange juice


Line pan with rhubarb pieces; cover with sugar, cinnamon, and orange zest. Mix dry ingredients and combine with shortening, milk, and egg. Pour over rhubarb. Bake at 350 degrees for 25 minutes, then pour over 1 Tblsp orange juice and sprinkle with sugar and bake 10 more miutes.
