Pumpkin Roll

3 eggs | 3/4 cup flour |
1 cup sugar | 1 tsp baking powder |
1 cup pumpkin | 1/2 tsp salt |
1 tsp lemon juice | 2 1/2 tsp pump pie spice |
Beat eggs for 5 minutes; add flour, baking powder, salt, and pumpkin pie spice. Spread on large well-greased and floured cookie sheet. Sprinkle with 1 cup finely chopped nuts. Bake at 375 degrees for 15 minutes. Immediately dump on towel "floured" with powdered sugar. Let most of the steam escape. Roll, towel and all. Let cool rolled. When cooled, unroll and fill with the following mixture: 1 cup powdered sugar, 8-oz. pkg cream cheese, 4 Tblsp butter, 1/2 tsp vanilla. After spreading mixture on cake, re-roll. Wrap with plastic wrap and freeze. Slice to serve.
