Marshmallow Easter Eggs

2 envelopes Knox gelatin | 2 cups sugar |
1/2 cup cold water | 1 cup water |

Place 1/2 cup cold water in large bowl; sprinkle in gelatin. Let sit to soften. Boil sugar and 1 cup water for 5 minutes. Place mixer in gelatin and beat while slowly pouring in the syrup; continue beating until thick and mixture forms soft peaks--about 15 minutes. Place about 1 1/2 inches of flour in large, flat pan. Make impressions as deep as possible with hard-boiled or plastic egg. Spoon marshmallow mixture into flour impressions, rounding top with a spoon. Let set until firm. Dip in melted chocolate or candy coating. Makes about 2 dozen.
