1 1/4 cup oil 2 tsp salt
2 cups pumpkin 1 tsp soda
5 eggs 1 tsp cinnamon
2 cups flour 1 pkg coconut pudding
2 cups sugar 1 cup chopped nuts

Use instant coconut cream pudding. Mix oil, pumpkin, and eggs. Add dry ingredients, pudding, and nuts. Mix. Grease and flour 2 regular-sized loaf pans. Bake at 350 degrees for about 1 hour.
