1 1/4 cup oil | 2 tsp salt |
2 cups pumpkin | 1 tsp soda |
5 eggs | 1 tsp cinnamon |
2 cups flour | 1 pkg coconut pudding |
2 cups sugar | 1 cup chopped nuts |
Use instant coconut cream pudding. Mix oil, pumpkin, and eggs. Add dry ingredients, pudding, and nuts. Mix. Grease and flour 2 regular-sized loaf pans. Bake at 350 degrees for about 1 hour.
