Parker House Rolls1

1/2 cup warm water | 3 eggs |
1 1/2 cups scalded milk | 1 cube butter, melted |
1/2 cup sugar | 1 tsp salt |
1 Tblsp yeast | 5-6 cups flour |
Dissolve yeast in warm water; stir. Add 1 tsp sugar. Pour scalded milk into large bowl with butter, sugar, and salt. Allow to cool to lukewarm. Add dissolved yeast, egg, and 3 cups flour; stir well. Stir in enough remaining flour to make a soft, sticky dough. Let dough rise until double in size. Pour dough onto well-floured surface. Sprinkle some flour over top of dough. Press dough out to 1/3 to 1/2-inch thick. Cut dough into circles to form Parker House Rolls. Place on greased cookie sheet. Allow to rise about 1 hour. Bake at 400 degrees for about 10 minutes. Brush lightly with butter.
