Morning Bran Muffins
Bread
1 cup craisins | 1 cube butter, melted |
1 tsp water | 2 cups plain yogurt |
3 eggs | 2 cups All-Bran cereal |
2/3 cup brown sugar | 1 1/2 cups flour |
3 Tblsp molasses | 1 1/2 cups ww flour |
1 tsp vanilla | 2 tsp soda |
1 tsp salt |
Spray 12 large-sized muffins pans with Pam. Combine craisins and water; cover with plastic wrap and microwave for 1 minute. Cool while covered. Combine eggs, sugar, molasses, and vanilla. Mix; then add melted butter and yogurt. Stir in All-Bran and let sit for about 30 minutes. Heat oven to 375 degrees. Add dry ingredients to cereal mixture until evenly moistened. Gently fold in craisins. Drop into muffin cups (they will be about 3/4 full). Bake about 20 minutes. Cool in pan for 5 minutes then gently twist each muffin, lift, and transfer to rack. Cool before freezing.
