1 cup flour | 1 1/4 cups lowfat milk |
1 1/2 tsp baking powder | 1/3 cup brown sugar |
1/2 tsp baking soda | 1 egg |
1/2 tsp cinnamon | 1/2 cup applesauce |
2 cups 100% bran cereal (Kellogg's) |
Heat oven to 400 degrees. Mix cereal, milk, and brown sugar in a bowl. Let stand 5 minutes until cereal is softened. Stir in egg and applesauce until combined. Mix flour, baking powder, baking soda, and cinnamon in another bowl. Mix all together. Spoon into muffin pan sprayed with no-stick cooking spray, filling each cup about 2/3 full. Bake 18-20 minutes until golden brown. Serve warm.
