1 c butter or margarine | 3 tsp baking powder |
2 cups sugar | 3/4 tsp salt |
3 Tblsp lemon juice | 1 cup milk |
4 eggs | Zest of 2 lemons |
3 cups flour |
Mix butter, sugar, and juice until fluffy. Add eggs one at a time and beat well. Add flour, baking powder, and salt. Do not overbeat. Pour into bread pans. Bake at 350 degrees for 1 hour and 20 minutes. Remove from oven and puncture all over top of loaves with toothpick halfway down into the loaf. Pour glaze of 1/2 cup lemon juice mixed with 1 cup sugar over bread; let stand for 20 minutes. Remove from pans. Yields 2 loaves.
