4 eggs |
1/2 tsp soda |
1 cup oil |
1/2 tsp salt |
3 c flour |
1 c buttermilk |
2 c sugar |
1 c coconut flakes |
2 tsp coconut extract |
1 c nuts |
1/2 tsp baking powder |

Oil and flour 2 regular loaf pans or 4 small. Beat eggs, then cream in sugar, oil, and extract. Add all dry
ingredients; then add milk, coconut, and nuts. Beat well. Bake 50 minutes at 325 degrees. Adjust for smaller pans.
For tube cake, bake 1 hour and 20 minutes. Loaves will be golden brown with a crack on top.
GLAZE: In saucepan, put 1 cup sugar, 1/2 cup water, and 2 Tblsp butter. Bring to boil and boil for 5 minutes,
stirring constantly. Remove from heat and add 1 tsp coconut extract. While loaves are still warm (fresh from oven),
pour glaze over and let stand for 4 hours. The loaves will absorb the glaze and will easily come out of pans.
