1/2 lb. pork sausage 2 Tblsp oil
1 egg 1 cup pancake mix
2/3 cup milk 1/2 tsp cinnamon
1/2 cup apple
Cider Syrup:
1/2 cup sugar 1 cup apple cider
1 Tblsp cornstarch 1 Tblsp lemon juice
1/8 tsp pumpkin pie spice 2 Tblsp butter/margarine


Cook sausage over medium heat until no longer pink; drain and set aside. In a bowl, beat egg, milk, and oil. Stir in pancake mix and cinnamon just until moistened. Fold in apple (peeled and shredded) and sausage. Pour batter by 1/4 cupsful onto lightly greased hot griddle. For syrup: combine sugar, cornstarch, and pumpkin pie spice in a saucepan. Gradually stir in cider and lemon juice until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from heat; stir in butter until melted.
