8 eggs |
1/2 cup flour |
1 tsp baking powder |
3/4 tsp salt |
3 cups shredded Monterey Jack cheese |
1 1/2 c cream-style cottage cheese |
2 4-oz. cans mild green chilies, seeded, rinsed, and chopped |
Beat eggs 4 to 5 minutes until light. Stir together flour, baking powder, and salt; add to eggs. Mix well. Fold in Monterey Jack cheese, cottage cheese, and chilies. Turn mixture into greased 9 x 9 x 2-inch baking dish. Bake at 350 degrees for 40 minutes. Remove from oven; let stand 10 minutes. Cut in small squares; serve hot. Makes 3 to 4 dozen appetizers. These can be cut cold for appetizers. Excellent for breakfast! Dinner: Add a good salad and hot rolls.
