1 can drained black-eyed peas |
1 can Sheopeg or white corn (or white frozen corn, thawed) |
1 can white corn, drained and rinsed |
3 Roma tomatoes, diced |
2 avocados, diced |
1/2 cup chopped cilantro |
1/2 cup chopped green onions |
Sauce: |
1/2 cup olive oil |
1/2 cup red wine vinegar |
2 cloves garlic |
1 tsp cumin |
1 tsp each salt and pepper |
In small bowl mix the sauce. In a large bowl mix all salsa ingredients and add sauce mixture. Chill or enjoy right away!
